Born in Montreal, raised in Amsterdam, Parfois happens from time to time, just about anywhere we can share plates and pour glasses. Bringing together chefs and wine professionals, we aim to make a contribution to fine dining that is a bit more radical, accessible, and evocative of better ways of thinking, cooking, and eating.

Intermissions and Cochonneries

Bringing together our shared skills in butchery, charcuterie, and cooking we will prepare a whole lamb, nose-to-tail, in various dishes throughout the week. Along for the ride will be some of the usual favorites and seasonal classics showcasing the best produce and products of December.

With plenty of wine to accompany the meal, we are expecting a very memorable few nights. We cannot wait to cook for you! Please reach out to us if interested in reserving a table; otherwise walk-ins are welcome!

Wine Takeover Wednesdays with Chris Walsh

Chris Walsh lived and worked in New York for years as a theater lighting designer and wine bartender before he moved home to Amador County to plant baby vines in a mountain meadow across from the house he grew up in. While the babies grow up, he also gets into his pickup to haul fruit from the Sierras and Sacramento to his tiny garage winery, the End of Nowhere. We'll taste a range of his newest stuff, including skin-contact verdejo, bright pink pinot gris, and the lightest touch zinfandels you've ever tasted, alongside other peoples' wines that are his reference points and inspirations.

Wine Takeover Wednesdays with Terah Bajjalieh

Terah Bajjalieh has only been making wines under her own name since 2020 — a project she began just before the pandemic hit — but before her name was on the label, she'd already been in hospitality for years and worked harvest in five countries. While she's in town from the West Coast, she'll share a range of bottles focusing on Italian varieties in overlooked places throughout California, from ramato pinot gris in a biodynamic vineyard on the Central Coast with a view of the ocean to barbera nestled in the Sierra Foothills—and we'll open some fun examples from the mother country to taste alongside.
